Italian Chef
(based in Macau)(Portofino)

to operate a signature restaurant (Portofino) in the Venetian Macau, target ed to open August 2008
The outlet will have 250 seating capacity with high volume turnover and a kitchen brigade of 45 chefs
minimum 10 years experience with Italian food in free standing restaurant
dedicated hands -on chef with an excellent knowledge of Italian & Mediterranean food
able to associate Italian Culinary authenticity and creativity
self-motivated and able to demonstrate leadership
customer oriented chef
promote team spirit between kitchen and service
can communicate in English (both oral & written)

reporting to the General Manager
to oversee overall italian kitchen Operation
to manage, train and motivate a team of 45 chefs
responsible for menu development & implementation, food cost & kitchen labour control, quality control
